Radish - pickled and more!

Pickled radish 

I usually use radish in salads or sandwiches but this time I thought I would make a pickle out of them and then use them in sandwiches since I have been making a lot of them these days.

I followed this recipe to make the pickle and right now it’s sitting in my refrigerator looking very yum.

Radish leaves pesto

After making my radish pickle I was left staring at the beautiful green leaves and I love any green leafy stuff so decided to make pesto out of it and it came out delish! I usually end up using this pesto on sandwiches that I make for lunch or with pasta for most part and also have left overs to share with a friend or two. 

Ingredients 

- bunch of leaves of about 6-7 radishes

- 1/3 cup olive oil

- juice of 1 lemon

- salt and pepper to taste

- handful of walnuts and sunflower seeds 

- handful of cilantro

- 2 garlic cloves

Blend all the above ingredients together. Add a little water if you need to blend easily and to the consistency you like. I personally like it a bit nutty so I do not blend too long as that would make it too smooth.
